Underbite soups and sandwiches is the result of a lifetime of experience in the food industry. I love cooking. I love soup. I love eating. Most importantly, I love cooking for other people. I’ve been doing it for over 30 years, so hopefully that experience shines through.
I care about what I serve and how it impacts my environment. This is why I strive to purchase from local sources. I use recyclable and compostable containers. I want to leave my kids with a better environment than has been left for me.

Pastrami: smoked in house and sourced from Nehalem River Ranch in Nehalem, Oregon
Tofu: Ota Tofu in Portland, Oregon
Cheddar Cheese: Tillamook Creamery in Tillamook, Oregon
Bacon: Zenner’s Sausage Company in Portland, Oregon(sourced from Carlton Farms in Carlton, Oregon)
Clams: Bell Bouy of Seaside, Oregon
Bread: Marsee Bakery in Portland, Oregon & sometimes from Portland French Bakery
Seitan: created in house with vital wheat gluten flour from Bob’s Red Mill in Milwaukie, Oregon
Chips: Tim’s Cascade Snacks in Auburn, Washington
Water: Koz water. A local to Oregon company sourcing from California. Still canned. Just say no to plastic.
Spoons, knives, forks, napkins, sandwich liners & wrapping paper, soup container and lunchbox container: all are recyclable and compostable
